Ingredients
- egg whites 300g
- whole eggs 3
- frozen spinach or mixed vegetables 350g
- low-fat cottage cheese 150g
- mustard 1 tsp
- capers 15g
- jalapeños 20g
- chili flakes
- salt
- pepper

Combine egg whites, whole eggs, frozen vegetables, chili flakes, salt, and pepper in a large microwave-safe bowl.

Microwave for 4–5 minutes total, stirring once halfway through if possible.
